From the famous Block 5 planting of Cabernet Sauvignon high on the rocky slopes of Alder Ridge Vineyard in the Horse Heaven Hills of Columbia Valley Washington, this source delivers the structure, concentration, layered and age-worthy old-world style of Cabernet Sauvignon that we prize. Following a long, cold maceration, the dark small-berried fruit was slow fermented, followed by a short-extended maceration and then aged in a series French oak barrels including one new (Seguin Moreau, a long-time favorite of ours for Cabernet Sauvignon), with the rest once and twice filled. A yeast strain isolated from the Pauillac appellation in Bordeaux home of some of the world’s finest Cabernet Sauvignons and an inspiration for ours.
