The 2019 Ice Prince Pinot Noir Sweet Wine is the new companion to the Ice Princess Riesling Sweet Wine that we have been making for the last decade. Much as Riesling captures terroir in a unique way as a white wine, Pinot Noir plays that role in the red wine realm. With the added concentration that comes with the ice wine process, the expression of place shines through in these wines, in this case from the organically grown Pommard clone of Pinot noir on the southwestern slope and sedimentary soil part of Luminous Hills Vineyard. The fruit as whole clusters is taken straight from the vineyard to cold storage where it is frozen for four to five weeks, after which it is immediately pressed very slowly over the course of several days, producing an intensely concentrated, aromatic, rich and layered dessert wine. Bright acidity balances the sweetness making this both refreshing on its own terms, or as a companion to both the sweet and savory. Time in the bottle will reward.
